What you need:

- 1 fresh green papaya
- 1 carrot
- 1 green bell pepper
- 1 ginger
- 3 cloves garlic
- 1 onion
- 1 cup muscovado sugar or brown sugar or coconut sugar
- 1 glass or ceramic bowl
- 1 glass jar
Recipe for Green Papaya Atchara (Pickled Green Papaya)
- Grate, squeeze and air-dry one fresh green papaya.
- Prepare an equal amount of thinly sliced carrots, green bell pepper, ginger, garlic and onion.
- Make a brine solution by mixing one cup of Mama Sita's coconut nectar vinegar with one cup of muscovado sugar and a pinch of salt. Boil the brine until all the sugar is dissolved. Pour the hot brine over the papaya and vegetables on a non-reactive bowl (glass or ceramic). Mix well.
- Once cooled down, put the brine and papaya-vegetable mixture in clean jars. Close the jars and let the atchara cure for at least 5 days before serving.
